Simple Chia Pudding

Chia Pudding

If you haven’t tried Chia Pudding yet you are in for a real treat! This breakfast is not only extremely simple to make, but it’s also very versatile and super nutritious.

The base of any Chia Pudding is this:

  • 3 tablespoons chia seeds
  • 1 cup liquid

All you have to do is combine the chia seeds with the liquid in an container with a lid (I use a mason jar) and stir it well. Place the covered mixture in the fridge, and in about 5 minutes give it another good stir. Then, place the mixture back in the fridge overnight letting it sit for about 8 hours.

From there you can eat it as it is or add fruit or nuts on top. Like I said chia pudding is very versatile. You can use any kind of liquid, almond milk, hemp, soy, any juice or coconut water. You could also add vanilla extract for additional sweetness or a squeeze of orange for some freshness. Really explore, the possibilities are endless!

After being away for a little over a week my body is craving some simple nutritious food.  Going away is often a great reset for my mind. It gives me time to reflect and be an outsider looking into my current life. I always come back more inspired and stronger then when I left.

After returning refreshed I decided to make sure to do this more often for myself. Not necessarily to go away but to take more moments for myself to check-in, pause and see how I am feeling. I hope you can do the same.

Your clarity is important, take time to let it surface. You, like everyone else, is worth it.

Smooth Operator

  • 1 cup almond milk
  • 1 banana, frozen or not
  • 1 pear
  • 1/2 cup spinach
  • Additional superfood you have lying around (Hemp, Chia, Flax, etc.)

Blend until smooth, about 2 minutes. Enjoy!

Hummus Quinoa Wrap

Veggie wraps are some of the quickest and healthiest meals out there. You can throw all your favorite vegetables and sauces in one wrap and take it on the go or enjoy it in the comfort of your home. This Hummus Quinoa Wrap is one of my staples. I hope you enjoy it just as much as I do.

Hummus Quinoa Wrap

  • 1/4 cup quinoa, cooked
  • 1 tablespoon hummus
  • 1/2 avocado, sliced
  • 2 slices of tomato
  • handful of spinach
  • juice of half a lemon
  • 1 wrap

Mix quinoa and hummus together then load one side of wrap starting with quinoa hummus mixture and ending with squeezing lemon on top of spinach. Wrap up and enjoy.
